Winemaker/ Producer: Winemaker Philippe Collotte and daughter Isabelle

Region: Bourgogne (aka burgundy) more specifically from Marsannay the northernmost commune in the Côte de Nuit

Grape: Pinot Noir

Soil: Cailloux (Small pebble)

Viticulture: sustainable, low yields 

Winemaking: Clusters are entirely de-stemmed, indigenous yeasts, slow fermentation with 5 days of pre-fermentation cold maceration

Aging: Aged for 11 months 90% in stainless steel tank, remaining 10% in neutral oak

Tasting Notes: cherry, red raspberry, rose petal, dust, and green peppercorn

For Fun:  Noble Souche translates to noble vines.  The pinot for this cuvée comes from vines that were planted in 1947.  It’s exciting to have a red burgundy available by the glass! (tasted 12/16/19)
