Winemaking: Hand harvested in late September grapes are de-stemmed. Approximately 8 week maceration.  Spontaneous fermentation with indigenous yeast in clay amphorae, for eight weeks under temperature control. The wine is then moved to used barrels and allowed to complete malolactic fermentation where it rests on lees for seven months, stirring every day in the beginning with inert gas until the wine is protected. Unfiltered. Bottled in ceramic.

Tasting notes: The bottle makes it look more intense than it is.  A well balanced and slightly delicate “orange” with refreshing acidity.  Aromas of wildflowers and lemon peel. Tastes of orange marmalade, almond and tarragon.
