Grape: Lambrusco di Sorbara 100%

Soil: Loose, silty, permeable, rich in potassium

Viticulture: integrated and sustainable

Winemaking: hand-harvested, Soft pressing with traditional 2 days of maceration on skins. Alcoholic fermentation in temperature controlled stainless steel tanks. Second fermentation in autoclaves for about 60 days. Only 6,500 bottles are produced from each refermentation, thus second fermentation takes place at different periods during the year.

Tasting Notes: blueberry, raspberry current, tart citrus peel, violet and tomato leaf
