Viticulture: Organic

Winemaking: Hand-harvested in early September. The grapes are gently pressed and separated from the skins between the first and second pressing. Spontaneous fermentation takes place in temperature controlled stainless steel tanks. Four month on lees while secondary fermentation takes place

Aging: 12 months in bottle

Tasting Notes: cloudy, chalky, pear, citrus and stone fruits

For Fun: Col Fondo in Italian translates to “with the bottom.” What’s the significance you ask?  Because the second fermentation takes place in the bottle without disgorgement - so the wine comes with the yeasts that have died and fallen to the bottle of the bottle (if you keep it upright of course ; ) ).
