Viticulture: Certified organic

Winemaking: short maceration on skins for 3 days and spontaneous fermentation with only native yeasts 

in small cement casks, without the use of chemical additives and oenological agents.

Aging: 6 months in cement and steel casks, then at least 2 months in bottle

Tasting notes: sweat, fresh apricot, green almond, cider, hay (tasted 12/1/19)
