Winemaker/Producer: Raphaël Bérêche & his father Jean-Pierre

Region: Montagne de Reims

Grape: Roughly equal parts, pinot noir, chardonnay and meunier

Soil: chalk based with loam, clay, sand, silt and marl

Viticulture: natural with some vineyards converted to biodynamic

Winemaking: vineyards are vinified separately, with natural yeasts used for smaller tanks and selected yeasts for larger ones. Vinified in Barrel.  Avoiding malolactic.

Aging: *If not stated the minimum aging requirements for a NV champagne is 15 months with 12 of those months on the lees.

Tasting Notes:  White peach, cream, yellow apple, citrus, wet stone, toast - If someone is looking for a classic flavor profile for champagne - this is it!
