Panisse: The Snack We Get Asked About Most
Let's talk about panisse.
It's one of the dishes we get asked about most, which makes sense, because unless you've spent time eating street food along the southern coast of France, you may not have encountered one before. Panisse (pah-NEESS) is a chickpea fritter from Provence, most at home in Marseille, where vendors have been frying them to order for centuries. The ingredients are simple: chickpea flour, water, olive oil, and salt. Cooked into a thick batter, set, cut into strips, and fried until the outside is golden and crispy and the inside is soft and custardy, somewhere between a french fry and a really good polenta cake. Traditionally eaten alongside a glass of rosé, which, honestly, we have deep respect for.
Our version is served with housemade herbed tahini sauce. The combination is a little unexpected but totally addicting. Plus, we should mention they are also gluten-free. They're a snack, but they're also the kind of thing that quietly becomes the reason you stayed for another glass of rosé.
