Viticulture: organic

Winemaking: Hand harvested.  13 hour maceration on skins before pressing, fermentation in concrete with indigenous yeasts. Minimal sulfur.  Unfined. Unfiltered.

Aging: 6 months in concrete, 3 months in bottle

Tasting notes: ripe melon, tangerine, bay leaf, thyme and oyster shell.  The 13 hour skin contact on this vintage really adds depth and some earthy tones to this Sicilian expression of grecanico.  (tasted 11/27/19)

For Fun: Throughout northern Italy grecanico is known as garganega white grape varietal that is used to make Soave and Soave Classico wine.
